Creating Chocolate Delight

My choccolate is made from single source, organic, fair trade cacao (pronounced ca-cow) beans that I roast and grind. The next step is to winnow the husks away. Then the cacao nibs are ground very finely, producing Chocolate Liquor. The liquor and any other ingredients (depending on what kind of chocolate I'd like to create) are then put in the stone wheeled melanger for fine processing. This generally takes about 24 hours, at which point the chocolate is tempered and molded and, if desired, fillings are added.

Dark Chocolate

Dark Chocolate contains only cacao beans and sugar. Cacao beans make up 70 percent of the mix.

Milk Chocolate

Milk Chocolate is 45 percent chocolate; being made of cacao beans, cocoa butter, powdered milk, powdered sugar (home-made - no corn starch!), and organic soy lecithin.

Food of the Gods

The scientific name Theobroma means "food of the gods". The word cacao itself derives from the Nahuatl (Aztec language) word cacahuatl, learned at the time of the conquest when it was first encountered by the Spanish.
